Roasted Chickpeas

These roasted chickpeas are a really healthy snack. Packed with protein and fibre so they will really fill you up and they're much more nutritious than many packaged snacks and much tastier! You can adjust the seasoning to suit your tastes and make them much spicier if you prefer - I love using harissa seasoning too. These can also be cooked in an air fryer. They will keep in an airtight container for a few days.

Roasted Chickpeas

Serves 3-4 as a snack


Ingredients for roasted chickpeas


  • 400g tin of chickpeas, drained

  • 1 tsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp ground coriander


Directions

  • Heat the oven to 180C/160C fan.

  • Drain the chickpeas and lay them out onto a clean tea towel to dry

  • Place the chickpeas into a bowl and combine with the oil, smoked paprika, cumin and coriander.

  • Toss well until the chickpeas are well coated, then tip out onto a baking tray and bake for 35 mins, moving them round the tray halfway through so they dry out evenly and go crunchy.

  • Leave to cool, then store in an airtight container
