This easy high protein vegan bean salad takes minutes to throw together and is packed full of protein, fibre and loads of nutrients. Its one of my favourite lunches served on top of a mixed salad with a dollop of hummus on top. This will make about 4 servings and it comes in at around 350 calories per serving.
Ingredients:
For the salad
1 400g can of cannellini beans
1 packet of ready to eat Puy lentils (I use the Merchant packets)
1 small red onion diced
100g of cucumber diced
one yellow pepper diced
a handful of parsley chopped
100g of cooked or tinned sweetcorn
2 tbsp of capers
For the dressing:
2 tbsp of olive oil
1 tbsp of white wine vinegar
1 tsp of Dijon mustard
Instructions:
Cook the beans as per the instructions on the tin (or better still, buy dry beans and soak and then cook them).
Cook the Puy lentils as per the packet instructions.
Mix all of the salad ingredients in a bowl with the cooked beans.
Mix the dressing ingredients together and then pour over the dressing and stir everything together.
Just had this for lunch. Easy and delish.
